I tend, when people are angry at me, to wait until things have calmed down to apologize and just hide, in the meantime, so that I don't get yelled at--because my guilt-trips are more than enough punishment on their own.

Is there something wrong with this? It's always seemed reasonable to me, but it never does to anybody else.

Well, there are probably better-adjusted sorts of strategies, but speaking from experience, yours seems to work, so I've got no criticisms.
